I have to say upfront that 60 Minute IPA is one of my favorite beers, if I can’t find anything on the shelf that I want to buy I usually fall back on this beer.

60 Minute IPA is Dogfish Head’s flagship beer, it’s a golden colored, dry, hoppy beer. Dogfish Head makes this beer by continuously adding hops every minute over the course of the 60 minute boil. I’d always believed that the IPA style was originally created because the higher alcohol and high amounts of hops (a natural preservative) allowed the beer to survive the trip to India, but according to Wikipedia the people at the East India Trading Company simply liked the style.

According to Dogfish Head:

I’d have to agree with the spicy foods and pizza thing, I had pizza and pepperoncinis with 60 Minute IPA tonight, and it was outstanding.

Dogfish Head (described as “off-centered ales for off-centered people”) was Delaware’s first brewpub when it opened Dogfish Head Brewings & Eats in Rehoboth Beach in 1995. Since then they’ve focused on making interesting beers with unusual ingredients.
